Bud, "the Pieman" Royer is the funky founding father of Royers Round Top Café, and Royers mail order pies. Bud, along with his wife, Karen, and their four children moved to Round Top in 1987 and took over the tiny 40-seat Round Top Café. The Royer clan is the third family to run the cafe since it opened in 1946. With no culinary training or kitchen experience, Bud and his family, have built and marketed the café into a well-recognized Texas institution. Today, his oldest, daughter Tara "the Pie Queen", has become the second-generation steward of the Royers brand. Tara now owns the café where she's been working since the age of 12. She and her husband Rick Steele, take Bud's vision and turn them into realities.

The menu at Royers Round Top Café will surprise you. Instead of the typical country fare, you'll find "a Texas country bistro serving gourmet comfort food." You'll find grilled rack of lamb, an "OH MY GOD!" succulent beef tenderloin filet, shrimp stuffed quail, grilled shrimp BLT, and a truly impressive wine list of more than 50 selections. Then of course, there is always the legendary counter filled with gorgeous handmade pies!

Although Round Top is a town of only 77 people about an hour's drive from both Austin and Houston, word of mouth has traveled far. The story of this iconic Texas bistro has drawn the attention of many regional and national publications, including USA TODAY, The Washington Post, Southern Living and Texas Monthly among others. Recently, Bud the Pieman and the café have been featured several times on The Food Network.

This small eatery has literally redefined the phrase "word of mouth" marketing in the restaurant business. The Royers have never bought an ad or sent out a press release but they sure have sent out many a of their pies! The Royers ship thousands of their pies to every state in the country through by mail order. In their spare time they cater the café experience to events, large and small, throughout the state.
